Vegan-friendly kale pesto

This bright green kale pesto tastes so good you’ll want to spread it with everything from grilled fish to zucchini noodles. Not only is it creamy and delicious, it’s packed with kale, a vegetable rich in cancer-fighting antioxidants, fiber, iron, and vitamins A, C, and K.

Kale weight with natural ingredients

But kale isn’t the only healthy ingredient in this recipe – pine nuts and olive oil are loaded with heart-healthy fats. Pine nuts are also rich in manganese, magnesium, and zinc, while olive oil is loaded with antioxidants that help protect the heart and blood cells from damage.

A third of a cup of this spicy kale pesto has 219 calories , which is worth considering how much flavor it adds to a dish. We love serving pesto as a sauce with raw, as a topping for protein like steak and fish, or mixed into a grain salad.

And if you are concerned that your breath will smell from the addition of raw garlic , just know that the ingredient in its raw state can fight disease, lower blood pressure and lower cholesterol levels.

Ingredients

  • 3 cups raw kale
  • 1 cup fresh basil
  • 1/3 cup of natural pine nuts
  • 3 garlic cloves
  • 1/2 cup of extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon of lemon juice

Preparation

Crush the ingredients

In a food processor or blender, add the olive oil, lemon juice, garlic cloves, pine nuts, salt, pepper, basil, and kale. Beat for 1 minute and stop.

Mix several times

With a spatula, scrape down the sides of the food processor. Push the ingredients down and mix again until smooth. You may need to repeat this process one more time to achieve the proper consistency.
