Low calorie broccoli omelette

Eating healthy does not have to be boring. If you are a lover of tortillas, today you are going to discover how to make a broccoli omelette easily and quickly. If I have been able to make it (and I am quite bad at cooking), I am sure you will get a haute cuisine dish. Obviously, we are not talking about your grandmother's potato omelette, but if you want to get rid of that desire and broccoli is not your favorite vegetable, this recipe will give you a new vision.

Only two ingredients

Broccoli and eggs For what else. I am not very fond of onion, and many people "repeat" the taste of garlic, so in this recipe you will find only the two main ingredients. To avoid cleaning the broccoli and cutting the stems, I recommend that you buy frozen, so that it is easier to mash.

tortilla de brocoli

As for the garnish, some slices of seasoned tomato are incredible. And if you are a cheese lover, take advantage of the fact that the omelette is hot to put on top some sheets of goat cheese. When they melt they remain like a delicacy of the gods.

Ingredients

  • 600 gr of broccoli
  • 3 eggs
  • 3 egg whites
  • Salt and pepper to taste
  • 2 tomatoes
  • Goat cheese

Preparation

We prepare the broccoli

My advice is to use frozen broccoli to avoid splitting and cutting the stems.

Cook it according to the instructions on the package and set aside for a few minutes. When it stops smoking, mash everything with the help of a fork, until you get a dough and there are no too hard pieces.

In a pan for tortillas …

Grease the pan with a little olive oil and add the crushed broccoli to make it go.

Beat the 3 eggs together with the 3 whites. Add salt and pepper to taste and add everything to the pan. Set the heat to moderate and ensure that it does not burn at the bottom and edges. Help yourself with a plate to turn the tortilla over and let it cook for a few more minutes.

Serve it!

When it's done, carefully remove it from the pan and accompany it with some seasoned tomatoes.
If you love cheese, I recommend putting a few thin slices of goat cheese on the tortilla so they melt.
