Low calorie persimmon sponge cake

Ingredients

  • 2 persimmons
  • 1 envelope of yeast
  • 6 walnuts
  • 4 eggs
  • 300 grams of oatmeal
  • 150 ml of vegetable drink
  • Sweetener to taste

Preparation

We make the first mix

First we beat the 4 eggs and add the vegetable drink (or milk). If you are adding sweetener, do so at this time as well.

Crush persimmons

Remove the leaves and crush the persimmons to incorporate them into the mixture.

Add the flour

Sift the oatmeal with the yeast and add everything to the previous mixture. Keep beating until you have a homogeneous mixture.

Baked!

Pour the mixture into an ovenproof pan and top with the walnuts. Bake for 40 minutes at 160ºC.
