Keto Bechamel without flour

Béchamel is a basic sauce used in lasagna, gratins and dozens of classic dishes. The seasoning is super simple: salt, pepper and a pinch of ground nutmeg. Cream cheese is also often added and there are practically thousands of other flavor combinations, so allow yourself to be creative and feel free to play. You could start by adding a little flavored cream cheese, although in your first keto béchamel recipe it’s best not to fantasize too much so it won’t cut you off.

One thing to keep in mind is to make sure that when you choose the cream cheese for this low carb béchamel sauce, you select the “full cream”. Avoid any fat-free or skim cream cheese, as you want the sauce to be low-carb, but not low-fat.

What dishes can you use keto béchamel in?

Low carb béchamel sauce is such a versatile recipe for adding extra flavor to otherwise boring meals. It’s also relatively inexpensive to use cream cheese for white sauces instead of buying it ready-made (if you can find low-carb, no-added sugar cheese sauces).

This type of sauce goes quite well with:

  • Meat dishes
  • About steamed broccoli
  • Mixed with cauliflower
  • With roast chicken
  • As a sauce to add fat to seafood such as prawns, lobster, and crab. Most seafood is quite high in protein and low in carbohydrates, but lacking in fat.

Ingredients

  • 1 3/4 cups heavy whipping cream
  • 4/5 cup cream cheese
  • Half a teaspoon of salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg

Preparation

Prepare the sauce

Add the heavy whipping cream, cream cheese, salt, pepper, and nutmeg to a medium-size nonstick saucepan. Bring the mixture to a boil over high heat, continuing to stir.

Reduce the temperature

Lower the heat to medium-low and simmer uncovered for a few minutes, until you reach the desired consistency.

Ready to drink!

Before serving the béchamel, season with salt, pepper and nutmeg to taste.
