Curry rice with broccoli

We usually prepare paellas with the characteristic yellow color that saffron provides, but what would you think if we changed it to curry? Possibly it had not occurred to you to use this spice, but its nutritional contribution is more interesting than that of saffron. Ingredients

  • 1 cup of brown rice
  • 3 teaspoons of curry
  • Pinch of pepper
  • 1 broccoli
  • 2 carrots
  • 1 can of corn
  • 1 glass of white wine
  • Spices and salt to taste

Preparation

We prepare the vegetables

In a medium skillet, greased with a little extra virgin olive oil, add the cut broccoli (without the stem). Cut the carrots into small pieces and add them to the pan as well. We put on medium heat and move frequently so that it browns without burning.

Add the rice

Add half a glass of water and cover the pan for about 7-8 minutes. Next, we add the drained corn and stir to mix everything well.

When the vegetables are tender, add the rice and a little salt. Remember to pour 2 and a half cups of water for every cup of rice. Put it on low heat.

Add the spices and let it cook

Once we mix all the ingredients, add the curry and a little ground pepper, in addition to the glass of white wine to add flavor. Let it cook for 20 to 25 minutes, until the rice has a tender texture and there is no broth.

Wait for it to rest covered for 3 minutes and eat it.
