Banana bread

Banana bread is a delicious recipe ideal for breakfast or snacks. It must be said that, although it is called "bread", it is rather a sponge cake. The ingredients, as you will see, are totally healthy.

We have provided two different flours , but you can always adapt it to your liking or depending on what you have at home. With milk it is the same, you can use a vegetable (almonds, oats, soybeans, rice …) or a skimmed animal.

In the case of nuts , we have chosen some nuts to give it a "brownie" touch. In case you are allergic or do not like this dried fruit, change it for another or do not add any. You can even add dark chocolate chips or banana chips.

The bread will have a different texture than you are used to because we do not use yeast, but we assure you that it is delicious and melts in your mouth.

Nutritional value

If we divide the bread into 10 slices, each slice contains:

216 calories, 2.5 grams of sugar, 9.4 grams of fat (4.3 saturated), 29.5 grams of carbohydrates, 3 grams of fiber and 5 grams of protein.

Ingredients

  • 2 medium ripe bananas
  • 1 egg
  • 1 cup buckwheat flour
  • 1 cup oatmeal
  • 1 cup of brown sugar, stevia or brown sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup unsweetened almond milk
  • 1 Teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Preparation

Pre-heat the oven

Put a wire rack on the bottom of the oven and preheat to 180ºC.

In a bowl…

Add buckwheat and oatmeal, brown sugar, cinnamon powder, baking soda and salt. Mix well until integrated.

The bananas

Crush the bananas with a fork.

Prepare a mixture

To the union of dry ingredients, add the crushed bananas, the egg, the vanilla essence and the milk. Stir. Add the chopped walnuts and stir again.

To the mold!

Grease a rectangular pan with olive oil or use baking paper so that the dough does not stick. Bake for 60-75 minutes, time varies depending on the oven.

The banana bread will be ready when it is browned on the outside and when you put a toothpick in the center, it comes out clean.

Let it cool

Even if you really want to eat it, let it cool to room temperature and then cut it into 10 slices.

It will hold you perfectly if you keep it in a tupper at room temperature.
