Vegan Pad Thai

Ingredients

  • 200 grams rice noodles
  • 2 carrots
  • 1 zucchini
  • 1/2 onion
  • 100 grams white cabbage
  • 2 chilli peppers
  • 2 garlic cloves
  • 250 grams drained tofu
  • 2 tablespoons of extra virgin oil
  • A little bit of salt
  • 1/2 glass of soy sauce

Preparation

We prepare the tofu

Drain and chop the tofu into cubes. Next, we put the soy sauce in a bowl and add the tofu so that it macerates for about 20 minutes.

We boiled the noodles

In a pot with water, boil the rice noodles for 4 minutes. Drain and reserve.

We prepare the vegetables

If you have wok it is a perfect option, but it will also serve you a pan.

Add the two tablespoons of extra virgin olive oil and sauté the minced garlic cloves and the chillies for 2 minutes. Then we remove the chillies. and add the chopped vegetables. We cook them all at high temperature for 10 minutes.

Add the tofu

Finally, we add the tofu and the white cabbage and let everything cook for about 5 minutes.
