Sweet potato waffles

Why sweet potato and not potato?

Sweet potato is also known in other places as sweet potato, sweet potato or sweet potato. Like the potato, it is a tuber, although more irregular and with a thicker and harder skin. It is usually recommended over the potato, since it has a greater amount of fiber and makes it more digestive. Ingredients

  • 1 small sweet potato
  • 2 whole eggs (or 2 whites and 1 egg)
  • Extra virgin olive oil
  • 1 clove garlic
  • Salt and pepper to taste
  • Various spices: parsley, dill, chives …

Preparation

Prepare the sweet potato

Pre-wash the sweet potato and cut it into very small pieces.

Add a little extra virgin olive oil to grease the pan and start sautéing the garlic clove (finely chopped above).

Add the sweet potato and cook for about 8 minutes. Stir so it doesn't burn.

Beat the eggs, add the sweet potato, spices, salt and pepper. Mix everything perfectly until there is a homogeneous mass.

Previously heated, we grease the waffle iron and pour the mixture. Close it and let it cook for 3-5 minutes.
