Carrot fitness cupcake

Mugcake: a cupcake in a cup

The concept of making this type of cupcake is quite curious and easy to carry out anywhere. You only need a microwave and a cup, so they are all advantages when it comes to cleaning. Also, by not needing flour, we are reducing the intake of refined carbohydrates and their calories.

Ingredients

  • 75 grams of carrot
  • 50 grams of ground almond
  • 1 egg
  • 15 grams of defatted cocoa 0% sugar
  • Sweetener to taste

Preparation

We prepare carrots

Peel the carrots, wash them and cut them into thin sheets. Put them all in a cup and cover it with plastic wrap. Make 3 or 4 holes with the fork and put it in the microwave, for 2 minutes at full power.

In a blender …

Add the carrots, egg, ground almonds, cocoa, and sweetener. Beat well until smooth.

Microwave!

Place that mixture in a cup (ungreased) and microwave it on full power, for 1:45 minutes. If you leave it longer you will have a fairly dry cupcake.

Let it sit and turn it over on a plate. Ready to eat!
