Muffins bombs (filled with peanut butter)

The pastry is one of the most complicated branches of the kitchen. Almost all of us look good with a soupy rice, but very few have perfect spongy muffins. With this recipe you will have nothing to fear, especially if you do not improvise in any step. Muffins filled with chocolate and peanut butter will be a real delight to have a healthy snack, while satiating your cravings.

However, being healthy does not imply that they are low in calories. The use of unrefined ingredients will help us consume better nutrients than in an industrial bakery product, but do not trust yourself to eat the entire tray.

If you have donut molds, it will be easier to fill them; but if you can't help yourself with a knife to make the hole, as we have done. Once finished, I advise you to put them in the fridge. They will hold you with good flavor for 3-4 days.

Ingredients

  • 2 eggs
  • 100 grams of oatmeal
  • 40 grams of cocoa powder 0% sugars
  • 120 grams of plain yogurt
  • 100 ml milk
  • 40 grams of sweetener
  • 30 ml of coconut oil
  • 10 grams of yeast
  • 10 ml vanilla essence
  • 100 grams of peanut butter
  • 30 grams of cocoa powder
  • 15 grams of sweetener
  • 150 ml milk

Preparation

We mix the ingredients of the muffins

In a large bowl, pour the eggs, cocoa, milk, sweetener, yogurt, coconut oil and vanilla essence. We mix well.

Personally, I like to sift the flour so that lumps do not form in the mixture and it becomes more oxygenated. If you sift it, go incorporating it little by little and mixing at the same time.

Baked and baked!

In some muffin molds (or donuts), pour the mixture and put them in the oven at 180ºC for 20 minutes.

Do not open the oven during the cooking time so as not to interrupt the process.

We create the filling

In a small bowl, put the peanut butter, milk, and cocoa powder. With patience, mix until a smooth dough remains.

We fill them

We let them cool to room temperature and we begin to fill them. With the help of a knife, we make an opening in the middle of the cupcake and fill.

We cover with chocolate!

To prevent the filling hole from showing, we dip our muffins in dark chocolate.
You can create liquid chocolate by mixing cocoa powder with a little water and coconut oil.
