Low calorie avocado brownies

Ingredients

  • 1 ripe avocado
  • 1 cup whole wheat flour
  • 3 eggs
  • 4 tablespoons defatted cocoa powder (Value)
  • 1 teaspoon of vanilla extract
  • 8 teaspoons of Stevia
  • 2 tablespoons hot water
  • 3/4 cup light vanilla yogurt

Preparation

Pre-heat the oven

Preheat your oven to 180ºC for when we have the mixture ready.

We start with the mix

Remove the skin and the bone from your avocado (medium size) and mash it with a fork.
Put the three eggs, the yogurt and the avocado in a mixer and mix until the avocado disappears.

Make the chocolate

In a cup or small bowl, pour the two tablespoons of hot water and the cocoa powder. We will end up getting a kind of pasta, which we will add to the previous mixture while continuing to beat.

Add the rest of the ingredients

When you have well mixed avocado, eggs, yogurt and cocoa; add the flour little by little, the stevia and the vanilla extract. Beat everything very well.

Pour into the mold

In a mold previously greased with a little olive oil, pour the mixture and bake for 30 minutes.

Take it out of the oven and let it cool

After about half an hour, take the brownie out of the oven and let it cool to room temperature for 10 minutes. Then put them in the fridge for 20 minutes for consistency.
Cut them into squares and voila!
