Fit spinach pancakes

When you think of pancakes, the first ones that come to mind are the ones we eat with chocolates for breakfast, right? We want to discover a version suitable for light lunch or dinner. Spinach pancakes are very easy to make and you only need two ingredients. In addition, its greenish color will catch the attention of the little ones or the guests who taste this dish.

What can you fill pancakes with?

You can really accompany them with what you like the most. Personally, I am passionate about filling them with crushed tomato (homemade) and mozzarella cheese. Although you can also add tofu or textured soy, to have the feeling of eating a brightly colored burrito. You can even take it in a tupper to the gym and accompany them with your favorite protein (tuna, chicken, turkey …). There are numerous combinations, and all really good.

Try to make them thin so that they can be cooked and do not remain raw inside. I'm sure you will like the taste, and if you hate spinach it may be a good choice for you. Preparation

We prepare the mixture

First wash the spinach leaves well. Then we put them in a mixer with the eggs and a pinch of salt. We beat until a homogeneous mixture is left without lumps.

Lightly grease the pan or pancake griddle with a little olive oil. Then we pour the mixture on it, but we do it with thin layers. Keep in mind that the thicker they are, the more it will cost to cook inside, and you have the risk of burning them.
