We have used ground almonds and grated coconut to avoid using a greater amount of oatmeal, and thus reduce the intake of refined carbohydrates. If you don't have these easily accessible ingredients, you can just use oatmeal (crushed rolled oats).

Ingredients

  • 70 grams of oatmeal
  • 40 grams of almond flour (ground almonds)
  • 30 grams of grated coconut
  • 2 eggs
  • 1 natural yogurt
  • Vanilla
  • 3 grams of yeast
  • a pinch of salt
  • Sweetener to taste
  • Homemade Nutella for the filling

Preparation

We mix the dry ingredients

In a bowl we add the oatmeal, almond flour, grated coconut, salt and the chosen sweetener.

We mix the wet ingredients

In another bowl we add the eggs, yogurt, vanilla essence and again sweetener. We mix everything very well.

We join the two mixtures

In the bowl of the liquids, we gradually add the dry ingredients. I recommend doing it little by little, while mixing at the same time.

We pour into the mold

We put the dough in the mold of the cakes and put in the oven for approximately 20 minutes at 190 ° C.
To see if they are done, we look little by little and click with a toothpick to check that it comes out clean.

We let them cool and fill

When the cakes have been made, we let them cool.

With a straw, we pierce each cake. With the help of a syringe or piping bag, we fill with Nutella.
