Citrus macarons with 60 calories

Gives color

If you want to choose to give them a fun and different touch, you can use food coloring . It is a great idea for small children's snacks or to upload a photo on your social networks. As a presentation you can put a little orange zest or a few mint leaves on top.

Ingredients

  • 5 egg whites
  • 1/3 cup stevia
  • 1 + 1/2 teaspoon vanilla extract
  • a pinch of salt
  • 1/2 cup of fresh orange juice
  • 1/4 cup fresh lemon juice
  • 4 teaspoons cornstarch
  • 3 tablespoons of stevia
  • 1 egg yolk

Preparation

Pre-heat the oven

Preheat your oven to 350º.
Grease a baking sheet with a little olive oil and set aside.

First mix

Put the egg whites in the smoothie and beat until they have the snow point. Slowly add the stevia, vanilla, and salt. Beat until peaks form.
Using a spoon, go round partitions of the mixture on the tray and bake for 10 to 15 minutes.
Take it out and let it cool down.

We prepare the filling

Mix the 3 tablespoons of stevia and the egg yolk in the mixer.
Add the orange juice and cornstarch until all the ingredients are well integrated.
Pour the mixture into a small saucepan and cook over medium heat until it thickens.
Let cool and put it in the fridge.

Assemble your macarons

Take two macarons and put some filling in the middle.
Repeat the procedure with the rest of the macarons and serve them.
