Coconut and lemon cookies without sugar (digestive type)

With the arrival of good weather, we all fancy light snacks and snacks, with fresh touches. We have made some super crunchy coconut and lemon cookies (with chocolate coating). If you like digestive type cookies, hard but without taste of cardboard, I recommend you make our recipe.

It is not only low in calories and without added sugars (or sweeteners), but it is also very quick to make. In less than half an hour you will be biting them.

If you don't have almond flour, substitute it with ground almonds or another type of nut flour. It is important that you do not substitute it with a normal wheat flour, since it is less porous and moist. On the other hand, if you don't have dates either, you can use raisins or dried apricots. But it is not advisable to replace the sweetness with sweeteners.

Ingredients

  • 100 grams of oatmeal
  • 50 grams of almond flour (or ground almond)
  • 100 dates soaked
  • 20 grams of grated coconut
  • The zest of 1 lemon
  • 20 grams of coconut oil (or extra virgin olive)
  • Chocolate 85%

Preparation

Shred all ingredients

In a bowl, add all the ingredients and crush. Since most are dry, it will cost a little to mix them. Give the mixer small breaks and go stirring the mixture so that it does not stick to the blades.

If you think it is too dry, go adding water little by little.

Flatten the dough

Take the dough with your hands and make a ball. Now put it on a baking paper and flatten it with the help of a rolling pin (or a glass, if you don't have it). The dough has to be very thin.

Use a cylindrical cutter (or the same glass) to shape the cookies.

Baked!

Put the cookies on an oven rack, on a paper towel, and put them at 180ºC for 12 minutes.
I left them a little longer, since you have to make them not fluffy, but dry.

Add the chocolate

You can eat them without adding any topping, but I chose 85% dark chocolate. Delicious!
