Fried and battered are great enemies of a healthy life. However, many traditional recipes that are cooked in this way can be substituted with other ways of cooking them. One of these recipes is the fried ratatouille dumplings. Using a healthy flour such as oatmeal or chickpea , and filling them with a good amount of vegetables such as eggplant, tomato or zucchini , and cooking them in the oven instead of fried, the recipe can be a success.

Dish preparation
Before starting the recipe, it should be noted that a two-speed dish will be worked. And it is that first you will have to think about the ratatouille , and then the dough of the dumplings , so it becomes a laborious process. Not wanting to fall into the classic mass already cooked takes extra work, although our body will appreciate it. Regarding the ratatouille, making it with little oil taking advantage of the tomato and vegetable juice will make it much healthier.
Ingredients
- 1 green pepper
- 1 onion
- 1 red pepper
- 2 garlic cloves
- 1 zucchini (rather large)
- 1 Eggplant (also large)
- Peeled and chopped tomato (200ml)
- Olive oil
- Himalayan pink salt
- 80g oatmeal
- 20g chickpea flour
- 1 whole egg
- 1 egg white
- Coriander or oregano
- Black pepper
- Liquid sweetener (saccharin)
Preparation
First we will make the filling of the dumplings, in this case the ratatouille. Once we have it, we will go to the pastry dough. Here are the steps for the vegetable:
We will add a teaspoon of olive oil and chop the garlic and pour it into the pan.
Chop the vegetable into small cubes and add it together with the previously peeled tomato. Also season with a pinch of salt.
We will be around 45 minutes, perhaps an hour, stirring the ratatouille to avoid sticking. If it is very acidic, adding a little sweetener will fix it. Watch the tomato so that the dish is not acidic.
Once the ratatouille is ready, you have to make the dough, a laborious process but it will be worth it. These are the steps:
In a bowl, mix the flour with the egg together with the spices, salt and a little liquid sweetener. We will remove until we have the dough, and do not worry about putting our hands. It is even more comfortable directly with the hands than mixing with kitchen utensils.
We will gradually knead until creating a consistent and elastic ball to be kneaded. If it is very thick, a couple of tablespoons of water will be the solution. If on the contrary it is very sticky, do not hesitate to add a little more oatmeal to compensate.
Before use, we will preheat the oven to about 180º so that it is ready in a short quarter of an hour.
From the large ball we go to six small balls, one for each dumplings. With baking paper and a rolling pin, we will crush them to have fine circles with which to work the shape of the pie. They should be fine but not long enough to break.
Once we have the circles, it is time to put a tablespoon of ratatouille on each one. Do not abuse the amount as it will be difficult to close them later. We close them with a fork.
At 175º, we will have them for 15-20 minutes, watching until the dough is golden and cooked. Once they're done, it's time to eat!
