Protein sponge cake with oatmeal

For those who have doubts about substituting ingredients, you can use oatmeal only (instead of mixing with almond). We use the mixture to make it more moist and delicious in flavor.

As for the grated carrot, if you are not a lover of carrot cake, you can use sweet potato or cooked pumpkin. Neither provides too much flavor, and they have very few calories. If you prefer to do it with fruit, you can choose a roasted apple or ripe banana.

Lastly, yogurt will be the key to increasing protein content. If you can't find any yogurt that is high in protein (and without sugar!) You can go for a Greek. It will look great with your protein cake!

Ingredients

  • 50 grams of oatmeal
  • 25 grams of almond flour (ground almond)
  • 7 grams of yeast
  • 120 grams of egg whites
  • 100 grams of grated carrot
  • 20 ml almond drink
  • 1 tablespoon of cinnamon
  • 5 ml of vanilla essence
  • 160 grams of yogurt + protein (mercadona)
  • 5 ml of vanilla essence

Preparation

We mix the solid ingredients

In a large bowl we put the flours, the yeast and the cinnamon. Mix well.

We add the wet ones

We incorporate the almond drink, the egg whites, the grated carrot and the vanilla essence. We mix well so that everything is integrated. No need to beat (as long as the carrot is fine).

Microwave!

In a tupper or large bowl, pour the mixture and microwave it for 3 minutes.

Be careful not to burn yourself when taking out the mug!
