Ingredients
- 1 cup of almond flour
- 3 large eggs
- 3 tablespoons of butter
- 1/3 cup of milk
- 1/4 cup unsweetened nut butter
- 1 teaspoon baking powder
- 1 teaspoon of stevia
- 1/4 teaspoon of salt
- 1 tablespoon vanilla extract
Preparation
Heat the waffle iron to 210ºC and lightly grease with coconut oil, olive or butter.
In a small bowl, mix the almond flour, baking powder, salt, and stevia.
Add the egg whites and beat until they double in volume.
In a third bowl, put the egg yolks, the nut butter, the melted butter, the vanilla essence and the milk.
Add the dry ingredients and mix until well combined. Be careful with the egg whites, use a large spoon to move them, but without removing all the air from the beaten whites.
Put 1/4 of the batter in the preheated waffle iron and close the lid. Let it cook until the waffle is golden brown on both sides. This may take a few minutes or a maximum of 10, depending on your waffle maker.
