Spinach and mushroom frittata

We are used to eating Spanish omelette (the best, without a doubt) or French omelette, but did anyone know Italian? The frittata is the Italian omelette that you have surely made without knowing it. It can be similar to quiche because of the way it is cooked (it ends in the oven), but its base is just eggs.

It is a fairly protein recipe and we have decided to make a more fitness and healthy version. There are options that carry milk, others that do not include cheese or others that throw whole eggs. We offer you a variant without milk, with cheese (which we love) and with egg whites.

Vegetables, the key ingredient

The typical Italian frittata is the one that contains zucchini, onion and cheese, but we have given it a different touch by adding spinach and mushrooms. If any of these ingredients do not appeal to you too much, you can change them for your favorite vegetables. It is possible that you have ever eaten an old clothes omelette, but in this case we do not include meat and we finish it with a touch of oven.

The serving contains about 200 calories, mostly it's all protein and has a low percentage of carbohydrates. Tell us what you think and what vegetables you like to make it with!

Ingredients

  • 4 whole eggs and 2 whites
  • 200 gr of spinach
  • 1 onion
  • 100 gr of mushrooms
  • 60 g feta cheese
  • Extra virgin olive oil
  • Pepper to taste

Preparation

Pre-heat the oven

Heat your oven to 200ºC.

In a frying pan…

With a little bit of hot olive oil, sauté the previously chopped onion until it is transparent. Cut the mushrooms and spinach into very small pieces to add them to the pan as well.
Let them cook until everything is tender.

In a bowl…

Beat the eggs, whites and pepper.
Then add the mixture to the pan ingredients. Stir a few times and let it settle.

Add the cheese

After about 4 minutes, add the feta cheese.

Baked!

Put the frittata in the oven and let it finish cooking for about 7 minutes. You will love the result.
