Roasted potato stuffed with tuna

We do not know a person in the world who does not like potatoes, and it is possibly the favorite dish of many. In diets to lose weight it is advisable to eat baked potatoes for their less caloric intake than fried, but sometimes it can be boring to take them roasted without more.

We propose a fit recipe, in which the potatoes will be stuffed with tuna and other totally healthy ingredients. It is difficult that you do not like it, but if you prefer to change any of the components you can do it. As long as they are healthy and natural, of course.

Is potato a slow absorbing carbohydrate?

Potato is a carbohydrate, of that there is no doubt, but is it fast or slow absorption? You already know that the more complex the carbohydrate, the slower it will be absorbed and the more satiated we will feel for a long period of time.

Depending on the way it is cooked, the potato will turn into one type of carbohydrate or another. Dietitians-nutritionists prefer that we take them with their skin and roasted or cooked, due to their low caloric intake. This type would be slow absorption.
On the other hand, if we fry, grind or puree them, they become fast absorbing because the structure of the starch changes.

Ingredients

  • 2 potatoes
  • 2 cans of tuna in brine or with extra virgin olive oil
  • Olives
  • Corn without added sugar
  • 1 boiled egg
  • Grated Parmesan cheese
  • Spices to taste
  • 2 tablespoons of homemade tomato sauce

Preparation

Let's go with the potatoes!

Wash them and cut them in two. Place them on a plate or in a bowl and microwave them for 8 minutes to soften them,

Prepare the filling

While our potatoes are heating, we are going to prepare their filling.
In a bowl, pour the two cans of tuna without liquid, the olives cut into slices and the hard-boiled egg cut into small pieces. We also add two tablespoons of homemade tomato sauce, the spices that we like the most and a little salt.

We fill

Once we have the soft potatoes, we empty the content and join it to the previous mixture until it forms a paste.
Fill the potatoes and place them on a baking sheet.

Baked!

With the oven previously heated, we introduce our work of art at 200º for about 10 minutes.
