Wholemeal quinoa cake with chocolate

Most of the time, when we think about consuming quinoa, only salty recipes or important meals come to mind. Have you thought about making a quinoa cake with chocolate? You are going to hallucinate with this fitness recipe!

We are going to use the whole quinoa flour , something unusual for making dough, since oatmeal is normally used. From now on you know that this is also a healthy option, suitable for celiacs and perfect for diets of fat loss or definition.

This cake is a great idea for breakfast or as a snack after training. Being made with natural ingredients, it is rich in nutrients, vitamins and minerals.
The texture will remind you of brownie, but the flavor is very peculiar. The bitterness of cocoa and quinoa will make you discover new flavors.

By the way, we have not used yeast, but if you prefer you can add it without problem.

Ingredients

  • 50g whole wheat quinoa flour
  • 2 tablespoons defatted cocoa without added sugars (Value)
  • 150ml of egg whites and 1 whole egg
  • Grated orange peel skin (optional)
  • Stevia to taste

Preparation

We preheat the oven

We put the oven to heat at 180º.

In a bowl…

We combine the quinoa flour with the cocoa.

In the mixer …

We throw the whites and add stevia to taste. With the help of a stick mixer, we make the whites to the point of snow.
Add the egg and beat again to the point of snow.

Once we have that mixture, we start adding small tablespoons of the mixture that we made of the flour. If we want to give it a different touch, we can add a little of the orange zest.
If you want to avoid the whites falling, mix everything with the rods stopped and making enveloping movements. Don't gown!

In a mold…

We pour the mixture into a silicone mold with the shape that we like the most. If you see it convenient, you can grease it with a little virgin olive oil to facilitate the demoulding.

Baked!

We let it bake for 20 minutes at 180º.
When ready, let it cool to room temperature for about 10 minutes before removing it from the mold.
