Healthy Horchata without sugar

Horchata is a refreshing drink typical of Spain and North Africa. We are looking forward to the summer to go to a terrace and taste a very fresh horchata. Although it is true that you can take it on a suffocating hot day or as a dessert after a dinner with friends. It is like chocolate, it has a place at any time.

This type of drink is made from cereals, mixed with spices (usually cinnamon), nuts and a generous amount of sugar. Of course, all these ingredients can pose a threat to our balanced diet, and that is why many nutritionists prefer that their consumption be avoided. However, there are totally healthy variations without added sugar, so it will not be so hard if you are a lover of horchatas.

An occasional but healthy treat

Although this version is healthy, it does not imply that you can drink liters and liters daily. In Valencia, horchata de chufa is very typical, which is a nutritious tuber and unusual in other parts of the world. Depending on the area where you take it, you will find versions without nuts, dairy, seeds or tea-like. What you should avoid at all costs is the packaged and ultra-processed horchata. It must be recognized that this drink is not that it provides many health benefits. As an occasional treat it is quite good, and even more so if you opt for our healthy version. We have chosen brown rice and cashews to add creaminess.

Ingredients

  • 8 cups almond milk with no added sugar
  • 1/2 cup rinsed brown rice
  • 1/2 cup cashews
  • 1 tablespoon of cinnamon
  • 1 spoon of vanilla
  • Pinch of stevia (optional)

Preparation

Prepare the rice

Rinse the brown rice in cold water until the water runs clear. They are usually about three times.

In a blender…

Add the rice, cashews, 4 cups of almond milk, 1 teaspoon of cinnamon and vanilla. Mix until everything is homogeneous.

I put in a covered container and let it soak overnight.

The next morning…

Mix until smooth.

Pour the mixture into a large bowl and add the rest of the almond milk, cinnamon, vanilla and stevia to taste.

Enjoy!

Stir well and pour it over ice cubes when serving. Garnish with a sprinkle of cinnamon.
