Fajitas with textured soybean filling and vegetables

Textured soy is one of the best vegan options out there. Its high protein content (52gr per 100 of product) is perfect to give food of animal origin a break, and opt for new recipes.

I already told you that, among the different vegan foods, this was my favorite. Its appearance and texture is quite (you can't imagine how much) to minced meat. The "problem" is that it has no flavor or can hardly be seen, so you will have to cheer up with the spices to give it the flavor you prefer.
Textured soy is usually used in recipes after soaking it for about 20 minutes, but if you feel like it you can add it to some yogurt or salad in its natural state. It will give it a crispy touch and, as it has no flavor, it will not disturb the content.

Fajitas with textured soybean filling and vegetables

On this occasion, I made a sauce with tomato and crushed garlic, to which I added a mixture of bell peppers cut into cubes. You can choose the vegetables that you like the most, but think that you have to season it with spices and foods that add flavor.

From spices I chose paprika, oregano, pepper, cloves and a little salt. I assure you that the flavor is spectacular.

Ingredients

  • Textured soybean (80 gr)
  • 2 tomatoes
  • 1 garlic
  • 1 pepper
  • Extra virgin olive oil
  • Spices to taste
  • Salt
  • Fajitas

Preparation

Soak the soy

Cooking instructions are included in the instructions on the textured soy package. You will have to put it in a bowl big enough so that you can cover it with water.
Let it soak for about 20 minutes and drain it.

Prepare the sofrito

While the soybean grows in volume, crush the 2 tomatoes and a clove of garlic with the mixer.

In a frying pan, add a drizzle of extra virgin olive oil and add the crushed mixture. When you start making "chop chop", add the diced pepper.

Let it cook for 3-4 minutes and add the textured soybeans (if finished).

Add the spices

When it is well integrated into the sauce, after several turns with a wooden spoon, season with the spices you like the most and salt.

Create your fajitas

Once you have the filling done, heat the fajitas in a pan (without oil).
