Crunchy vanilla tart … with blueberries?

Blueberries are one of the healthiest foods with the highest content of vitamins and antioxidants. No wonder it is considered a true superfood . In addition to being delicious and being very versatile and easy to include in the diet, it has great benefits for our health.

This fruit helps to reduce diseases and, in addition, it has the ability to rejuvenate us , inside and out. It is suitable for all kinds of diets and, if you have not tried it, we do not know what you are waiting for.

Blueberries have anti-inflammatory properties and are given great anti-cancer power . Furthermore, it is a powerful antioxidant that protects cells and fights against premature aging.

Ingredients

  • FOR THE BASE
  • 100g oatmeal
  • 2 tablespoons whole oat flakes
  • 50g almond flour (ground almond)
  • 1 whole egg + 2 egg whites
  • Sweetener or stevia to taste
  • Cinnamon to taste
  • FOR THE FILLING
  • 300ml soy milk
  • 200ml of water (we leave half a glass to mix the gelatin powder)
  • 1 sachet of Royal gelatin or 6 sheets of neutral gelatin
  • 240ml of 0% smooth cheese or 0% yogurt
  • 2 scoops of vanilla protein (vanilla flavor failing)
  • Sweetener or stevia to taste
  • Blueberries (can be fresh, canned, or frozen)

Preparation

FOR THE BASE

We mix all the ingredients in a bowl and transfer it to a baking pan. A silicone one is recommended for greater ease when removing it. If the base dough is not completely wet, add a little more egg whites until you can catch the dough with your hands.

And now…

We spread it in the mold with our hands evenly and put it in the oven for about 15 minutes at 200ºC.

FOR THE FILLING

In a saucepan, pour all the ingredients over medium heat, except the glass of water with the gelatin and the blueberries. With some beaters to beat egg whites, we beat it hard so that all the mixture is homogeneous.

Then…

Without letting it start to boil, add the glass of water with the gelatin and beat even STRONGER! Exercising the forearm !!

We put out the fire …

We turn off the heat as soon as we add the gelatin and continue beating. Let it cool down a bit as we take our cookie out of the oven.

To end…

Pour the filling, which will be liquid, on the cookie and let cool. In half an hour we put it in the fridge. I left it on overnight, although about 3 hours will be enough.
