Chocolate Skillet Cookie Fit

If you are more addicted to cookies than Triki, I am sure you will love this healthy and fitness recipe. We are used to eating crispy cookies, but the skillet cookie has a different version: crispy on the outside, juicy on the inside. Also, what can go wrong if it's filled with chocolate?

This version of the skillet cookie is rich in protein as we chose to use vanilla flavored whey protein powder. In case you don't want to use this ingredient, you can add a little more oatmeal. You can modify the ingredients to your liking (or on demand of what you have in the pantry). Just like you have the option of making it from berries, replacing chocolate, or using another type of vegetable drink.

It is curious to make a biscuit stuffed in a frying pan or clay pot, but I assure you that there is a spectacular result. When you insert the spoon, the chocolate inside will be melted and the inside of the cookie will be tender. Ideally, let it cool down for a few minutes before you sink your tooth into it.

Ingredients

  • 100 grams of oatmeal
  • 10 grams of whey protein with vanilla flavor
  • 2 tablespoons of homemade peanut butter
  • 1 egg
  • 1 teaspoon of coconut oil
  • 1 teaspoon of yeast
  • 1 tablespoon soy drink with no added sugar
  • 3 ounces 90% dark chocolate
  • Cinnamon powder to taste

Preparation

We prepare the first mixture

We leave preheating the oven to 180ºC.

We beat the egg with the soy drink. Add the peanut butter and coconut oil. Stir well until there is a homogeneous mixture.

In another bowl …

We mix the dry ingredients (oatmeal, whey protein, cinnamon and yeast) we sift them and add little by little to the first mixture.

We move until all the ingredients are well integrated and we get a dough that we can handle with our hands.

Trick: moisten your hands to make it easier to shape.

To the mold!

We grease the mold (they can be iron pans or clay pots).

Divide the dough into two parts. The first one we put in the bottom of the mold.

We put some pieces of the chocolate ounces in the microwave so that they are a little melted. We spread it well on the first layer of dough that we have put.

We place the rest of the dough on top, crush well and add the rest of the chocolate pieces.

Baked!

We cook it for about 10-15 minutes at 180º C. As each oven is different, check that it does not burn after 10 minutes.
