Do you think that eating a sweet breakfast is not compatible with eating a good diet? I am here to prove you wrong. Eating healthy has many positive things, but mainly it teaches you the amount of food that exists and the infinity of dishes that can be made.
Do you dream of getting up and preparing pancakes? So, I recommend that you do not miss this version with banana.

If you are like me, who hates spending a lot of time in the kitchen, this recipe will give you life. It is easy, fast and needs only 4 ingredients. It can be a perfect Sunday option or even to prepare quickly during the week. It's also not like we have to make it a habit, but at least we make sure we eat top-quality nutrients.

tortitas de plátano

Perfect for children and celiacs

Oatmeal is a gluten-free cereal, so all celiac sufferers who miss sweets can enjoy this delicious breakfast. Also, introducing the banana is one of the best ways to ensure that the little ones take their daily portion. In addition, involving them in their preparation will keep them more motivated to eat them.

Decorate them with the ingredients that you like the most (while they are healthy): pumpkin nutella, nut butter, honey …

Ingredients

  • 1 ripe banana
  • 2 whole eggs or 1 whole egg and 1 egg white
  • 40 gr of oat bran
  • Pinch of cinnamon

Preparation

We crush the banana

In a bowl, mash the ripe banana that we have previously left without the skin. Being mature, it won't cost you too much work to crush it with the help of a fork.

We incorporate the ingredients little by little

Add the eggs to the bowl and mix well. Next, we add the oat bran and cinnamon. We stir again until we have a homogeneous mass.

In the pan!

It would be great if you had a pancake griddle, but otherwise a frying pan will do you perfectly.

Heat it over medium heat and grease it with a little extra virgin olive oil. My advice is to remove the excess with a kitchen paper.

Pour about 1/4 of the mixture and let it be done on one side first. When it begins to brown, turn it over and wait for it to cook on the other side.

Repeat with the rest of the mixture, but always pouring the same amount to make sure they cook perfectly.

Serve them

Decorate your banana pancakes with more banana on top, natural nut butter, or honey.
