Broccoli soup with cheese

Why do we use broccoli?

This vegetable is one of the most nutritious and totally recommended in weight loss diets. It cannot be lacking in your healthy diet because it is rich in fiber and antioxidants, so your digestive and immune systems will appreciate that intake. In addition, it has a high content of vitamins A, B, C, E and K, Omega-3 essential fatty acids, amino acids, zinc and potassium.

Likewise, the chicken broth that we will use supposes an extra increase in the minerals that improve the immune system during the cold season. It would be great if you made the broth with chicken bones at home, but if you opt for an industrial one, check that it is low in sodium.

Ingredients

  • 1 medium broccoli head (no hard stem)
  • 2 tablespoons of extra virgin olive oil
  • 1 white onion, chopped
  • 2 garlic cloves, minced
  • 1 stalk celery, chopped
  • 1 potato, chopped
  • 3 cups chicken broth, low sodium
  • 100 grams of cheese
  • Salt and pepper

Preparation

We start the rehash

In a large pot, add the extra virgin olive oil, onion and garlic. We stir until softened.

Add the broccoli

To the first rehash, add the broccoli, potato, celery, and chicken stock. Cook over low heat for about 20 minutes, so that all the vegetables are soft.

Whisk the mash

With the help of a blender, purée in the same pot. Let it cool down a bit and use it to keep it free of chunks.

Add the cheese and salt and pepper.

While hot, add blue cheese on top so it melts on its own and stir.

Season to taste with salt and ground black pepper.
